Carrot-Daikon Raita for Vata

You will need:

  • 1 tbsp grated carrot
  • 1 tbsp grated white daikon radish
  • 1/2 tsp minced fresh ginger root
  • 1/2 cup fresh plain yogurt
  • 1 large pinch fresh ground black pepper
  • 1 tsp ghee (clarified butter)
  • 1/2 tsp cumin seeds
  • 1 pinch asafetida
  • 1 pinch fenugreek powder
  • Rock salt to taste
  • 1 tsp chopped fresh cilantro

Whip the yogurt until smooth and creamy.

Fold in the carrot, radish, ginger, pepper, salt and cilantro.

Heat the ghee in a small skillet.

Add the asafetida, cumin seeds and fenugreek and stir briefly to release aroma.

Pour the ghee-spice mixture over the raita and mix well.

Serve at room temperature.
