Quinoa with Greens & Asparagus
You will need:
- 1/2 cup quinoa
- 1 1/2 cups pure water
- 1/2 cup diced asparagus stems and tips (keep tips separate)
- 1/2 cup finely shredded greens of your choice
- 1/8 tsp ground black pepper
- Rock salt to taste(optional)
- 1 tbsp ghee
Wash the quinoa thoroughly by rinsing it several times. Drain.
Heat a pan and roast the quinoa dry for about 5 minutes, stirring constantly.
Add water, greens and asparagus stems, stir and bring to a boil.
Cover, reduce heat and cook at a gentle simmer for about 15 minutes until quinoa grains are translucent.
Heat ghee in a pan until clear. Add the asparagus tops and black pepper and stir-fry briefly, about 2 minutes.
Stir in the salt and the spiced asparagus tops into the quinoa.
Enjoy warm.
